Also, not to be an ingrate, but I was hoping to be able to use high quality speed figures laid out on a graph format.

While all the stuff you mentioned is available to the general public, I can't imagine there are that many people out there risking cash on the race who are using a sheets-type product (especially if priced at 25 GBP a pop). Even if the odds are done by bookmakers, I would expect to find some off the beaten track angles using pattern plays (and if I am lucky, sheer number power).
